Well, in spite of some very witty things I was ready to say, Utah
has something on his pea sized mind which he is desperate to say, so
in the interest of brotherly love, I'll turn it over to him. Go to
it Utah !

When will they (you know who "they" is) stop treating me like a
baby. Yes, I like those little toys and love to chew them and yes I
love getting those hugs and kisses. But I AM an adult, turned two
in April. I mean, why can't I be left outside alone when they
leave. Why can't I go into the guest sun-room without supervision ?
I only piddled twice.
Here's another example. For months I've had my eye on a new resident
raccoon. I've watched it from afar out the dining room bay window,
resting my head for hours at a time on the window seat. At every
opportunity I've slammed open the door, raced towards the barn ready
for a hearty meal. Where he escapes to I still can't figure out.
But three days ago, the gods shined down upon me - or so I thought.
Gizmo and I went out the front and lo and behold there he was. We
took chase but not before he leaped up a tall tree. We barked, we
howled, we leaped but all for naught because amidst all this THEY
were yelling and screaming for us to leave. Saint Gizmo of course
obeyed immediately. But I was bound and determined. So I, being
quick and nimble, deeked them every time they grabbed at me. One
miss-step however and Dad had me in the air carrying me into the
house. I WAS SO HUMILIATED ! I'm an adult. Let me do what dogs do
and make my own mistakes if need be. How else will I learn.

Irish Soda Bread Muffins
So who says Irish soda bread HAS to be made in a round or loaf pan? While recently on a trip to New York City, I tried these
wonderful muffins in a small bakery and decided to come up with my
own recipe so I could serve these to guests.
2 1/4 cups All-Purpose Flour
2 tsp baking powder
1/4 tsp baking soda
1/2 teaspoon salt
1/2 cup granulated sugar (2 tablespoons reserved for sprinkling on top)
3/4 cup currants (first choice) or raisins
1 large egg
1 cup buttermilk (or plain yogurt, or sour cream)
4 Tbs (1/2 stick, 1/4 cup) butter or margarine, melted

In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, salt, sugar, currants or raisins, and caraway seeds. In a separate bowl, whisk together the egg, buttermilk (or equivalent) and melted butter (or equivalent). Quickly and gently combine the dry and wet ingredients; honestly, this won't take more than a few stirs with a bowl scraper or large spoon. As soon as everything is evenly moistened, quit; further stirring will cause the muffins to be tough. |

Spoon the batter into 12 lightly greased cups in a standard muffin pan, filling the cups about 2/3 full. Bake the muffins in a preheated 400°F oven for 15 minutes, until a cake tester inserted into the center of a muffin comes out clean. Remove them from the oven, wait 5 minutes, then remove the muffins from the pan and cool them on a wire rack. Serve them plain, or with butter and/or jam. Yield: 12 muffins. |

renovations finally
complete!!
Hi,
We are really pleased to announce the long awaited completion of
renovations to our two upstairs rooms, the Blue Room and the Foliage
Room (previously known as the Red Room).
Both rooms now have a large private bath with tub and shower. While the main
purpose of the renovation was to add private bathrooms, we also
added a large bay window seat to each room.

The Foliage room is the only room with a king size bed, (other
rooms have Queens) that incorporates two extra long twin beds
that can be separated for those who either want separate beds or
prefer a larger king size bed. In keeping with the name "Foliage"
the room has been dressed with local foliage photography. There are
still a few unfinished details and the pictures shown are minus
those details.Now all our rooms have private bath. We will post updated pictures.
