"Elmo, Grover and The Bandits!"

Editors note::  For many years we allowed one of our dogs to write a monthly column.  First there was “Isham’s Corner” and then “Gizmo’s Gossip”.    Jealousies with the other pets convinced us to give everyone a chance on a rotating basis.  Thus,

This is Elmo, pen in hand and paw on keys, ready for another vent.

Grover and I were a little miffed with all the warm weather in November and December. On top of all that extra Frisbee and ball play with Dad, we had an even better distraction....Robbie and Robin Robinson and family!

Every night like clockwork, Grover and I would hide behind the couch waiting patiently, eyes on the bird feeder for the Robinson's arrival. Sure enough, at 8 pm the masked bandits would arrive to steal the bird seed. We tried to warn Mom and Dad of their imminent invasion by throwing ourselves on the window and barking our scariest and loudest barks. NO RESPECT!!

Dad, barked himself, warning us to be quiet, and the Robinson raccoon family just ignored us almost double "DOG" daring us to keep it up.

Well, winter, snow and cold weather has now arrived and we still hide behind the couch waiting for the Robinson's. We know they will be back and Grover and I will be ready.

Love  ELMO, :)

Mini Egg Pizza Muffins (Paleo)

Mini Egg Pizza Muffin

This is a perfect make-ahead food for breakfast, lunch or snacks – but good luck keeping them around long enough to last a week, or even a day!

1 Tbsp olive oil
1 small red onion, diced
1 Tbsp tomato paste
2 C tomatoes, diced (or one 14 oz. can) strained
1 C pepperoni, diced
10 eggs
1 tsp each salt, oregano, basil
1/4 tsp pepper
1 C black olives, chopped (optional)
1 C mushrooms, chopped (optional)

  1. Heat olive oil over medium heat.  Sauté onions until almost softened, about 5 minutes. Add tomato paste, cook and stir for one minute until well incorporated with onions. Add tomatoes, cook 2 minutes stirring frequently
  2.  Add pepperoni, cook together for 4 minutes, stirring frequently.
  3. ♥ Crack and beat eggs until fluffy and bubbly. ♥ Add oregano, basil, salt and pepper to eggs.
  4. ♥ Grease muffin tin cups (eggs will stick) or use a silicon pan or liners.
  5. ♥ Spoon 1 Tbsp of tomato mixture plus any other additions into each muffin cup.
  6. ♥ Pour egg mixture into muffin cups until they are ¾ full (eggs do fluff up in oven).
  7. Bake at 325 degrees for 25-30 minutes, or until tops become golden brown. We prefer our slightly underdone if we’re saving them for the week so that when reheated the eggs do not become overcooked.
  8. Makes 16-24 pizzas, depending on how much you fill the cups with toppings. We filled our muffin cups about 50% with toppings and 50% with eggs and had 20 egg cups.
