It is no secret that the best skiing is during the week - fewer people, shorter waits, better powder. It is also no secret that inns and lodging establishments find it challenging to fill their rooms during the week in the off-season. (It's also no secret that everyone is edgy about the economy).

To encourage all of you to make use of weekdays during the winter, we're making the following offer. Come stay with us and to the extent that any or all of your stay includes two weekday nights, (excludes Friday and Saturday), we'll cut the cost of those weekday nights in half.

That's right, a 50% discount. So, for example, if you stay Wednesday, Thursday and Friday nights, those first two nights will be at half price while Friday will be at the regular rate. Or, if you stay Monday, Tuesday and Wednesday, the cost of the entire stay is cut in half. Such a deal. No other discount applies. (Excludes Fridays, Saturdays and holidays which occur on a midweek day)

Finally, now that our groomed trails are part of the Vermont Snowmobile Trail system and are ideal for both cross country skiing and snowshoeing, the winter special should be even more attractive.

Editors note:  For many years we allowed one of our dogs to write a monthly column.  First there was “Isham’s Corner” and then “Gizmo’s Gossip”.    Jealousies with the other pets convinced us to give everyone a chance on a rotating basis.  Thus,

Back in January I told all you about Larry (who we renamed Ari). He was - and still is - a Bengal Tiger cat, we rescued. His owner, a senior citizen, could no longer live on his own and the facility he went to forbade cats. A tearful visit to the Humane Society was the only alternative. Never having seen another animal, Larry/Ari freaked out at the Society whereupon they called us and begged us to take him..
For almost a year, Ari, Mom and Dad all tried to make it work. But it fell a bit short, especially, with us males. Guess it’s a territorial thing for us. Luckily for all of us, especially Ari, long time repeat guests Joanne and Joe came along and, with some hesitation resulting from grief from the loss of an earlier cat, took Ari with them back to New Hampshire.
WELL !. Talk about PAMPERED PETS. This cat is now living the life of Reilly. I’m not sure who has the broadest smile - Ari/Larry (now Harry Francis) or his owners. Actually, to tell the truth, I’m not even sure who is the pet and who is the owner.
In any event,  all of us couldn’t be more delighted at how this has worked out.  Joe and Joanne are proud parents again,  and back here there is now "Peace in the Valley for me."

Baked Eggs in Bread Rolls

Serve these adorable baked eggs for breakfast or brunch.

Baked Eggs in Bread Rolls

  • 8 crusty rolls
  • 8 large eggs
  • 1/4 cup chopped mixed herbs (parsley, chives)
  • 2 tbsp heavy cream
  • 4 tbsp grated parmesan

Preheat oven to 350ºF. Slice off top of each dinner roll and gently remove some bread until there is a hole large enough to accommodate an egg. Arrange rolls on a rimmed baking sheet. Reserve tops.

Crack an egg into each roll, then top with some herbs and a bit of cream. Season with salt and pepper. Sprinkle with Parmesan.

Bake until eggs are set and bread is toasted, 20 to 25 minutes. After eggs have cooked for 20 minutes, place bread tops on baking sheet and bake until golden brown. Let sit 5 minutes. Place tops on rolls and serve warm.
